The Sword of Shannara trilogy was excellent, as are all Terry Brooks' Shannara books.  However, my favorite series is R. A. Salvatore's Dark Elf Trilogy.

Uh, Dune? Not sure if that counts.

I don't know if it does either (really I have no idea what the books are about) but it is in the fancy section of Barns and Nobel so that is good enough for me

I must admit I didn't think there would be that much diversity. I thought Sword of Truth and Wheel of Time would take the lead but wow was I wrong. A lot of these series I have never heard of before.

I don't much care for fantasy, since it's based on magic, which I don't believe in. I can never suspend my disbelief enough to get involved in the story. Also, there is no suspense, since anytime the protagonist gets into a bind, a bit of magic will be conjured up to make things right.

However, I put down the "Dark Tower" series, but only because my daughter, a big King fan, insisted.

A Song of Ice and Fire.

Shortly followed by LotR and WoT.

Same, except that I like the Sword of Truth better than WoT by a narrow margin.

PS I would have voted for Dune, but that is Science Fiction, albeit with fantastical elements.

I am just a poor boy, but my story's told a lot
I lived in a tiny village working in some menial job until the monsters came
All burning crops, razing houses
Eating some people and kidnapping the rest

Well I couldn't save my family, so now I'm an orphan boy
With a sword some old guy gave me, and the skill to use even without practicing
I met this girl, seems she is some kind of princess
Which I prob'ly should have known from that tiara and her knowledge of twelve languages

So I'm learning to do magic from the owner of the sword
Who is a wizard, but that didn't help a bit when our town was attacked
I do declare, it would have been a help to have these talents while it was still there
(Humming, ironically)

When I'm trudging through some wasteland I'm wishing I was home
Or at least, some place where all these creatures aren't out to eat me

Now I'm facing off the badguy and I release some magic spell
Which I've always had inside me till the deus ex machina let it out and he goes reeling
With a terrifying yell

I remember reading Xanth books when I was very young, and I remember some of the characters, but the synopsis on wiki is completely unfamiliar.  I thought they were good back then, and I'm amazed to see how many there are now (not that I'll be running out to buy any).

Two other series I enjoyed as a whipper-snapper, that I would now shoo off my lawn, were the Books of Swords and MythAdventures.

Dune
is a series, as in Herbert wrote them serially, but the time spans of and between each novel make them impossibly interlinked.  BTW, if the bible's list of "Abraham begot Mike who begot..." puts you to sleep, best to skip Chapterhouse.
