When you cook in olive oil you are technically sauteing because the smoke point of olive oil is too low for frying.

Our deep fryer just broke. Again. We've gone through half a dozen in 10 years. Why can't they be made to last? And why do none of them have a removable heating element that isn't attached to the temperature control thingee for easy cleaning?

Thoughts on heavy consumption of deep fried foods aside, the only thing the high number of broken fryers means is that Joe needs a higher quality deep-fryer.
A department store model is not going to hold up as well as the higher end home products or smaller commercial units would.

From other posts, I gather that Joe's figured this out, and isn't looking for the next model in the Sunday sales pages of the local newspaper.

I've been running on warranty replacements for the past 4 years. It just so happened this last one lasted more than the 2 year warranty, lol.

I would like to see the trend of electronic controls reversed. They are less reliable and more expensive to replace they they fail.

Why isn't every single kitchen implement rustproof?

Every spoon, knife, pot, and otherwise metal item should have a no rust policy.

Granted, I tend to buy low grade hardware, but there is an expectation that in a kitchen setting you're not going to bother drying the can opener you rinsed off. It shouldn't rust.

So much this. I remember back around 2000, much ado being made about the "smart house." I thought at the time, "Oh, yeah--this has fail written all over it." You don't hear much about this trend anymore. Those smart houses get real dumb real fast.

At the heating plant where I used to work they installed one of those "smart" thermostats in the control room. No one could figure the thing out--including the plant's controls tech. Finally, I yanked the damn thing out and put in an old Honeywell model I had on hand.
