I was working on filleting the tuna properly for the nigiri this time. I also made a spicy tuna mix with chirashi sauce in the food processor. That is a nice way to use the uglier parts of the fillet.

I think I have the technique down, I just need to work on a couple recipies and cut back on the red caviar; too salty.

That looks good!!


There hasn't been a sushi place near my place until about a month ago when one opened up in a gas station up the street. I avoided it because well it's in a gas station. Well my overwhelming need for sushi overtook me yesterday so I decided to try it. I got a Ninja Roll- it was salmon, tuna, cream cheese, hot sauce green onion, and wasabi mayo...then deep fried. I don't know if that still classifies  as sushi with frying it but omg it was wonderfully yummy.   The other roll I got was more typically sushi, and also very tasty.  I still can't get over yummy freshly made sushi where you pay for it at the same spot you buy gas and smokes.

Tonight was grilled Hot Italian Sausages, with complimentary grilled vegetables on skewers.  Pretty good.  I love summer grillin'. 

Tomorrow is Lasagna.  I already made the sauce, its spicy with crushed red pepper, bell pepper for a green gardeney taste, and heavy on Parmesan.  Tomorrow I blend the cheese.  Ricotta, Parmesan, and shredded mozz, with an egg and black pepper, and some parsley.  I'm not a big fan of the traditional frothy ricotta inside, so I throw some bam on it. 

I got a ball of sweaty mozzarella to slice on top, best piece of mozz I've seen in a while.  Its practically thick milk.  And a crusty loaf of Italian bread.

Back on the low carb diet for a few weeks and trying to come up with a few recipes.

Turkey Spam and broccoli stir fry.




1/2 can turkey spam
1/2 bag broccoli
1/2 cup lite soy sauce
1 packet splenda
Tbsp black sesame


All kinds of processed unnatural goodness.

Wish I'd payed more attention when reading the title. Told family this is what I was fixing, thinking it was Gnocchi and Ricotta... then actually read ingredients & directions. Too late, kidlets were already excited about trying something new.

Ever notice how well they go together?  It's astounding!

Dry Sack ain't bad either (but a Spanish table wine's better.)
