Could I trouble you to post your recipe for the apples and pears?  I know it's a relatively simple thing but some people do little different things and I'm curious about yours.  Mostly because almost everything you mention sounds absolutely delicious.

You got it. Will type up basics for both oven & cooktop versions tonight while kids are at music lessons.

Hit the Julia Child section of my cookbook shelf for tonight's dinner.  Poulet Poele A L'Estragon (Casserole-roasted Chicken with Tarragon)
Super simple instructions, but they have to be in order & timed just right. Simmering the neck & giblets with onion & carrot for the brown tarragon sauce while the chicken roasts. Smell is driving dogs to distraction. (They know the cooled tasty bits go to them later, after I strain off the stock.)
Will be serving either with oven baked rice or couscous and steamed green beans.

Oh. I've never cooked duck before. I should correct that.

  :?  Depends - when cooking something like that for the first time, I'd probably pull out Mastering the Art of French Cooking. Julia & her pals did a fantastic job of describing how to work with the ingredients, and why it should be done the way it is.

After that, I'd be willing to branch out.

Oh! The NPR cooking show - Splendid Table... check their website. I have tried so many recipes from there, and received her "How to eat supper" cookbook - it's fantstic.  http://splendidtable.publicradio.org/

Search recipes for "Duck" - everything from crispy and ginger duck, to vindaloo
Maybe I'll see what's available at Whole Foods this weekend, so I can try the Duck Breast with Thyme Infused Honey and Balsamic Pan Sauce. (Or the vindaloo)
