My wife works on Irish Day, so tonight she's fixing corned beef and cabbage. That, and Irish beer, will make dinner.

Yum! I'd completely forgotten that was this coming week. I'll need to remember the corned beef & cabbage for the next cold rainy day. Can't do tomorrow, since I already picked up all the stuff to make Pho.

You know, I'll be hearing a few Pho jokes tonight - starting right after the kids go to bed. Not sure how he's gone through the last 10 years without figuring out doing the dishes is more seductive than plying me with old puns while I clean the kitchen.

On the dinner front though, the broth is simmering, the steak is thin sliced and waiting to be dropped in just before serving, and the platter of greens (basil, cilantro, bean sprouts, scallions, sliced jalapeno, lime wedges) are ready to go. Just need to start soaking the rice vermicelli in hot water before I pick the kidlets up from afterschool activities.

Very simple meal this evening.  Baked chicken (I used some organic Italian salad dressing I found at the grocery store on it), mashed potatoes, and corn.  It was easy, and boy have I been tired lately.

Tonight will be lemon grass skewers (chicken/turkey), sticky sesame rice and garlic green beans.

I prepped the skewers yesterday, while fixing several meals worth of ready-to-cook stuff - cheddar stuffed burgers, skewers, 2 batches of basil meatballs and a couple packs of ground poultry and herbs/veggies for spaghetti sauce, tacos, whatever. (My stockpile is a hedge against scheduling disasters, as opposed to the long term natural disasters.)
