Seeing as how my first batch of baklava was baked from the recipe in the "Guide to Pern" book I received for Christmas as a teen, I'm not sure I should really be labeled with "baklava baker".

I did experiment with different recipes and mixes of walnuts and pistachios, spices and honey in my 20s, and came up with a couple of pretty decent official combos, which I'd make several times a year - but that was before births of children # 2 & 3.

Baking definitely takes up a lot of time, especially with kids.  My daughters do much better now that they are 6 then they did a couple years ago.  They usually behave & let me do my thing on the days I have to bake when my wife isn't around.

Guess who is coming to Porc Fest?   :D

I talked to a bunch of people in the FTL IRC channel over the past couple days.  My wife even signed my permission slip to head up there this summer.  My plan is to rent a table & bring up 15-20 pans of baklava to sell during the festival.  From what I've heard Porc Fest is seriously lacking in dessert sales.  That will change, assuming you like baklava.  I may make something else, but it will just be me.  I don't want to over complicate things for myself.  My cousin may even come up with me, but he's more interested in the festival itself.  He's been dying to come up to NH to check out the FSP. 

So there you have it.  I know it's not until June, but I'm going to start making my plans now so I'm prepared.

The Armenian side liked it, and liked the moisture.
Other than scarfing it up like the Turks were coming to take it, they didn't have much to say beyond declaring it 'good'.

Delicious!

I love the soaked layers at the bottom of each piece. I'd like the top couple of layers to be a tiny bit drier & flakier, but don't think that's anything you've done. I'd bet that's being flipped over for a good part of the shipping. Because the top layers separate quite nicely when you're picking at layers of phyllo with a fork, trying to make yourself eat it more slowly, because the flavor is fantastic. They wouldn't come apart easily if they'd been completely soaked from the beginning.

Glad you enjoyed it!  I actually love peeling each layer off and eating it that way.  It usually is a bit drier at the top, as the syrup naturally settles to the bottom.  You're right, shipping impacts that.

That's part of it, but it wasn't just dampness, it was sticky honey... and the mailman had left it upside down on front steps, which is what made me think it probably spent a good bit of time like that on 2 days of travel.

Again, super tasty, so I'm quite happy with it. Only reason I won't be ordering as soon as this batch is gone is because I don't want to regain the 35+ pounds I lost several years ago.
