I love the soaked layers at the bottom of each piece. I'd like the top couple of layers to be a tiny bit drier & flakier, but don't think that's anything you've done. I'd bet that's being flipped over for a good part of the shipping. Because the top layers separate quite nicely when you're picking at layers of phyllo with a fork, trying to make yourself eat it more slowly, because the flavor is fantastic. They wouldn't come apart easily if they'd been completely soaked from the beginning.
