Not necessarily. The dry smoked applewood stuff i buy which is made from animals who are fed a vegetarian diet, with no antibiotics or hormones is $4-5 a pack (8-10 slices) at the market. That stuff is completely worth 50c per slice.

If you ask about a side of bacon, as in two slices, for $2.50 or more at a restaurant... then I'm going to be cranky about it.

The market adjusts accordingly to what people will pay.  Bacon is good.  It can probably be shown that they will sell no more at lower prices, so they raise it until consumption reaches an apex and maximize their profit per unit.  The other side of the economic model is impractical, lowering prices until maximizing thruput achieves a higher profit margin.

Restaurants base their prices on what people are willing to pay (i.e. supply and demand), not cost of ingredients and labor.  If you have a problem with that - eat at home.  Or, better yet, let's start a new chain - BonerJoe's Cheap-Ass Bacon Shack.  Count me in for a franchise or two.  We'd make millions by affiliating with local hospital and ambulance services.  :lol:
