What software can I get that'll allow me to copy a "Copy Protected" DVD onto my laptop? I want to ditch my DVD collection so I can just get these movies put onto my laptop (& backed up on an external hard drive too).

Excuse me for butting in, but I don't think its worth it to rip DVD's in bulk.
I could understand wanting to know how for a few certain keepers, and I can't really help you with that.
But if you're gonna do a whole shitload of DVD's, I would just suggest downloading your library from netflix or something. Or even Pirate Bay, and getting the 1GB version. Its probably not worth storing the 7gig version of a movie you'll watch twice, plus you gotta rip the whole thing down.
There are definitely movies worth a "full grab". But I think I'd be selective about what I took in full-size. I know I'm perfectly happy with hundreds of random movies in basic quality.
I went through a big CD rip last year, audio. It was a huge pain in the balls. If it was movies, I think I probably woulda skipped 90% of them and just took the 700mb version from pirate.

Then allegedly a program called dvd shrink can compress it to fit on a single layer dvd.
Of course anything I have written is pure conjecture.

The easiest way is to use AnyDVD combined with CloneDVD or CloneDVD Mobile. Those programs aren't free, but they are the best/easiest IMO. Gordian Knot (which can be downloaded on doom9.net) has also probably improved since I last used it if you want to go the free route.

Mac or PC? You might want to consider Handbreak which will remove copy protection and make a compressed file that you can play on your on your computer.
In fact you can get a 1TB or 2TB hard drive or if you have a lot of movies or television shows, say you rent a lot of movies or borrow from the library a lot, maybe you trade DVD's or you have a dongle that let's you record live TV, you might want to get a Drobo and use Boxie to watch all this content on your television.
It's like having your own Netflix.
The best Macintosh programs are Mac the Knife and the now unavailable VirturalHub (but it can still be found).

You mean MacTheRipper and VisualHub? I have both in the most current (I'm a "gifter" to the MTR project), and they're both good. I actually don't use MacTheRipper that much any more, but I use VisualHub to convert content I pull off my ReplayTV (which is a funky variation on MPEG-2.)
Handbrake (freeware), on both Mac and Windows, can be used not just to rip it, but to put it into a nice compact MPEG-4-based package (you choose as many or as few parameters as you want, including the type of output, such as AVI, MKV, MP4, etc.), but I probably wouldn't use it to get rid of my DVDs--I'd probably still toss them in a box somewhere. I use it to throw DVDs on my computer to take on a trip or to move them to my AVI-player for the TV (I get 1080i upscaling out of it--can't use one of those fancy new players because my TV doesn't have HDMI.)

I use AnyDVD-- got it to copy stuff I got in Australia to US-format. It does everything and does it well. Totally worth the money.

However, you have to be on a system that has functionality, rather than something more concerned with "ease of use" by hiding functionality from you.
If you're on such a system, you could look for "DvdDecrypter" "DvdShrink"

Like I give a shit about copyright on DVDs I already own. I'm just trying to load my collection on my laptop so I can have in-flight movies on my way to & from New Zealand & Australia without having to bring the discs.

Not illegal (yet) to make a fair-use backup copy of a movie you already own.
I have a couple dozen DVDs in the garage, in a closed protective container, which I have to go into once in a while to get an original because the kids scratched the shit out of one of the movies and it won't play any more.
Sadly, the RIAA/MPAA want such backups to be illegal, the DMCA originally did not have such a provision. However, traditional "fair use" doctrine has been applied even to encrypted DVDs.
BTW, copying the disk using "dd" doesn't break the encryption, it's still encrypted. Vlc handles encryption just fine.
What's illegal is OpenSource watching of encrypted movies all by itself, because the RIAA/MPAA decided to make the process of decrypting a DVD a licensed, proprietary process. However, if they are going to prosecute me for watching a movie on a Linux box, I think it will be easier for them to plant child porn or find some jpg in a backup somewhere that I didn't know was copyrighted.

MediaCoder is a good program for converting .vob files to .mp4 or .avi or whatever, when you finally get around to shrinking down the size of the files.
