but the fries look sick.  That's the drawback to In-n-Out, too.  I can't stand fries that aren't crispy on the outside.

It's so easy to do with fresh fries too. I dunno why they don't. Especially since Five Guys' use separate fryers for blanching and cooking.

BonerJoe's awesome french fry recipe:

5 minutes at 325 degrees.
3 minutes at 375 degrees.

Yeah, I imagine it would be similar to cooking something like pork.  Get it good and hot on the outside, then lower to cook in the inside over a longer period of time, or vice-versa, depending on the food.  I worked at two restaurants that pressure fried the food, and that system manages to get it crispy on the outside and fluffy on the inside (in this case, potato slices and wedge cut potatoes, both with the skin on.)  In no case was any of it frozen first.

Well, I don't think that would work.  Somehow they manage to cook the crap out of them without getting them crisp on the outside, so they'd probably just be really brown and dried out.

Be prepared to take some home no matter what. My wife and I between us can't finish a "small" fries from Five Guys with our burgers.

Recently got a Five Guys in the Keene area.  I haven't been there yet but maybe I'll try it soon.

For some reason they opened two Five Guys in Houston within ten minutes of each other. Both are pretty empty.

Holy crap, there's a Five Guys within about a 7 minute drive from me.  I didn't know. 

An In-and-Out Burger is supposed to move in soon further south, as well as an Elevation Burger.  My boyfriend's excited about the former being from California, and I'm excited about the latter because they apparently use only grass-fed beef for the burgers and cook their fries in olive oil.  I'm curious about how that compares. 

Burger Street is a good local chain....I usually go there because they have good quality and tater tots.  I prefer tater tots to fries by far.

It turns out there are Five Guys in the general vicinity, just not very close.  I wandered over to the nearest (about 13 miles, one way), and had a small burger, w/o cheese, small fries, and small drink (which set me back about $9!)  The fries weren't as bad as I expected, but I don't think I'll order them again.  The burger was indeed small, though the gal at the register implied otherwise, but it was very good.

The place is expensive, though at least one restaurant reviewer thinks it's cheap.  If I did it again, I'd get the regular burger and skip the fries, but I'm still not keen on spending $6.50 for a burger and a drink...and using close to a gallon of gas to get there and back.


I neglected to include that part of the value of the burger is that you get to order a few novel ingredients, such as grilled mushrooms, which I opted for.
