Love pig never had boar.  Only advice I had on boar was a guy I know in Texas that has gone hog killin on Texas ranches.  He said don't bother with adult males for eating.  Get either a female or better yet a youngster.

Older animals get tougher muscle, and also have more time in the wild to acquire parasites and sickness.

In captivity, it's simply a matter of how long you feed the bastards 'til they reach their full potential.  Nobody would keep a chicken for two years when it doesn't get any bigger after six months.

Beef Jerky Recipe

1 tsp prague powder / 5 lb beef
2 oz lemon
2 oz lime
1 cup Kimlan soy sauce
1/2 cup Kikkoman teriyaki marinade
1 tsp garlic powder
1 tsp onion powder
1 cup brown sugar
1/2 tsp baking soda
2 oz liquid smoke
1 oz cayenne pepper

Makes a little over 2 1/4 Cup Marinade -- about enough for 7 pounds beef.

Cut beef with slicer 6mm
Six seems to work best with eye of round.
Marinate at least over night--24 hours is better.
